Butterfly Blue Pea Flower is a very celebrated flower that provides an amazing blue colour to infusions. Add them to your blends to create a unique colour and if you serve with a slice of lemon or lime you’ll see the colour change to purple – very entertaining!
You can infuse these Butterfly Blue Pea Flower on their own and make a great iced tea. For a single latte glass style serving, we would suggest you soak about 12 flowers in freshly boiled water for around 15 minutes then remove the leaves. The water will have turned a deep blue. You could add some sugar for sweetness at this stage to ensure the sugar dissolves. Add some lemon or lime juice and watch the infusion turn purple. Have a latte glass ready with ice and pour over, then serve with a slice of lime.
