This roasted spicy chickpeas recipe is vegan and gluten-free and as a result makes a delicious and healthy snack. They’re perfectly seasoned, a bit spicy, and super easy to prepare. Perfect for a Friday night in front of the telly. You don’t need many ingredients for these roasted chickpeas. In fact, it’s one of the easiest recipes in my armory.
300gDried Chickpeas(or 2 tins of chickpeas drained)
2tbspOlive Oil
1tspPaprika
1tspGarlic Powder
1/2tspSalt
Instructions
Soak dried chickpeas overnight or drain the tins of chickpeas
In a medium bowl, toss the chickpeas with olive oil
Preheat your oven to 350 °F. Line a baking sheet with reusable parchment paper. Spread the chickpeas on the baking sheet and then bake them for 25 minutes.
Then take the chickpeas out of the oven and place them in the bowl you used before. Add the spices and toss well until the chickpeas are coated evenly
Return them to the baking sheet and bake for another 10 minutes until they’re browned and crunchy, but keep an eye on them to make sure they don't burn at this stage.
Notes
TIPS AND TRICKSIt’s important to dry the chickpeas as well as possible because this way they will become much crunchier. Sometimes I pop them in the oven for the first ten minutes without any oil and as a result they are lovely and crispy. Add any spices and seasonings towards the end of the baking time because they have the tendency to burn and make the baked chickpeas a bit bitter. Don’t skimp on the olive oil. It will make the roasted spicy chickpeas super crispy. If you don’t eat them straight away these should store in an airtight container for up to 2 weeks at room temperature. They will even freeze well.
It’s that time of the year again where we prepare to say goodbye to one year, and welcome in the next. Many people look to make sustainable new year resolutions. 2020 has certainly been a year that many of us will be happy to see the back of, and so it feels like a good time to think more about taking care of the world we are living in, as well as ourselves. A huge amount of uncertainty remains around the pandemic, and in addition finances for many are still very strained, therefore becoming more eco-conscious in 2021 needs to be more attainable and affordable than ever.
Here are six sustainable new year resolutions to help inspire you that won’t break the bank:
Refill
You can refill water, cleaning liquids, shower gels and shampoos at your local zero waste or refill station. https://ecomojo.co.uk/product-category/all-liquid-refills/. Pasta, rice, herbs, tea and coffee, nuts and seeds are often sold in plastic which is not even recyclable. These are all available without packaging at zero waste and refill stores. https://ecomojo.co.uk/product-category/bulk-and-refills/ . This also saves money because you are only paying for the product and not the unnecessary packaging.
Shop local where possible
It has never been a better time to make an effort to shop locally. Not only is it better for the environment it also helps your community, and is a great way to show your support. At your local shop or market, you meet the people behind the business. In addition you get better information and get fresher produce. You can even order bespoke items, a service you would never get from one of the bigger businesses.
Carry reusable bags
Carry reusable shopping and produce bags with you to reduce your impact on the environment. Keep a set of bags in your car, your handbag, your coat pocket, or your office drawer. This way, reusable bags will always be within reach. If you do end up without a bag then many stores will have empty boxes that you can use to carry your groceries instead.
Rethink how you get around
Are you like me, and find yourself driving everywhere? This year, make an effort to walk more, cycle more, take public transport or even carshare because it will help decrease your carbon footprint. Not only does this save money but it is also beneficial for your health.
Start composting
Composting is an incredible way to give back to the planet, because it is literally to give back to the earth. Grass clippings and tree leaves, also vegetable peels and cardboard can all be used in a compost pile or bin. Composting helps to reduce waste and improves your soil. In addition it reduces the need for synthetic fertilisers by putting essential nutrients back into the soil. It can also be a fascinating process for children to explore and get involved with. In fact check out the RHS website for loads of great advice on composting .https://www.rhs.org.uk/advice/profile?pid=444.
Buy secondhand
This is something that I have always done, however there is still some stigma around it. Clothing, accessories, home items or kitchenware, likewise cars and vans, you can buy almost anything second-hand. Not only will you be making an eco-friendly purchase, as a result you’ll also be saving money. If you buy from charity then you are also benefitting other people too.
